Blueberry and White Chocolate Muffins

Follow this recipe to make scrummy white chocolate and blueberry muffins!

You will need...
1 medium pack of fresh Blueberries/ strawberries
1 medium pack of white chocolate chips
150g Caster Sugar
300g Self raising flower
3 Medium eggs
150g unsalted butter
Muffin cases






Chop the whole pack of blueberries into halves.




     
2. Cube 150g of butter and place in a microwaveable dish



      
3. Melt in the microwave for a few seconds. Then leave to cool slightly on the side.



         
4. Whilst the butter is cooling. Weigh out 150g of Caster Sugar. Place this into a blender ( a bowl will              
              do)



          
5. Now pour in the melted butter. Then mix.

 6. Weigh out 300g of self raising flour and add this to your blender/ bowl. Mix until doughy!



         
7. Now whisk up 3 medium eggs for a few seconds.



          
8. Add the whisked eggs to the mix. Mix until a smooth mixture is formed.



            
9. Place the blueberries and the white chocolate chips into a dish and lightly sprinkle with self raising
                 flour. (TIP: this will stop the berries and chips sinking to the bottom!)



           
10. Pour the contents of blender into a clean bowl, add the chips and berries. Gently mix together!



            
11. Spoon the mix into muffin cases on a oven proof tray. (this recipe is enough for 12 muffins)



         
12. Place in the middle of the oven on a medium heat for around 20- 25 minutes.
                You will know when they are cooked, they will be fully risen and golden brown.
                (The house will smell nice and you will feel hungry!)





Leave to cool before eating as the juice of the berries will be extremely hot and will burn! I recommend with a nice cup of tea.
